DILL SEED: Like Caraway, its fernlike leaves are aromatic and are used to flavor many foods such as pickled salmon, Borscht and other soups and pickles. Both Dill Seed and Dill Weed come from the same plant, however, neither is a good substitute for the other. Dill seed has a somewhat bitter flavor, and the weed a more delicate flavor. Dill seed is good sprinkled over casseroles before baking and used in salad dressings.
INTERESTING FACT: Dill Seed is native to the Mediterranean area and southern Russia and has been used since ancient times. Babylonian and Syrian herbalists used it, and Romans thought it was an effective stimulant for gladiators.
